Butterscotch Bars

When getting my supplies for my Christmas cookie extravaganza I mistakenly grabbed a package of butterscotch morsels. Butterscotch is not one of my top favorites chips, but I knew that I had to make something with them. Since being overloaded with cookies for the last two months I decided to make a bar instead. I had kept this recipe a while from Weight Watchers because I knew that I could swap out the butterscotch for peanut butter morsels or even chocolate morsels.

Butterscotch Bars
adapted from Weight Watchers
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup butter (softened)
2 large egg whites
1 1/2 teaspoon vanilla
1 1/4 cups flour
1/2 cup baking powder
1/4 teaspoon salt
1/2 cup butterscotch morsels

Preheat oven to 350. In a large bowl combine dry ingredients, set aside. In a large mixing bowl white and brown sugars and butter until creamy, about 2 minutes. Add egg whites and vanilla; beat well. Slowly add flour mixture into wet mixture and mix just until blended. Stir in chips.
Spread evenly in an 8″ square pan that has been coated with cooking spray. Bake for 25-30 minutes or until pick comes out clean when inserted into center of bars. Cool completely and cut.

  1. I am so for scaling down the fat and calories in a recipe…this one looks good! I think we ate way to many cookies during the holidays. It was fun while doing it, but now it’s time to get a grip! Im tying to cut out baking so much, but it’s so hard. You see I love to bake! Oh well Im trying to find the right balance that works for us!

    • Yes. I was surprised when I saw the amount of baking powder, but I tried it anyway. Seemed to have worked. Maybe it is because it is a Weight Watchers recipe?
