Watermelon always remind me of summer. The taste, smell and look just scream BBQs, picnics and times by the pool. When K and I went shopping the other day and spotted one we couldn’t help but pick it up. At the time neither of us were thinking about how only two people were going to eat at whole watermelon – we just knew that we had to have it. So after a couple of days of eating it, we started to throw ideas back and forth on what to do with the rest. Along came the idea of a watermelon granita. On a recent trip to NYC I had an amazing granita and what a better way to cool down in the next couple of upcoming hot days!
Watermelon Granita
4 cups seedless watermelon chunks
1 cup simple syrup (1 cup sugar & 1 cup water. Bring the water to a boil. Dissolve the sugar into the boiling water. Allow to cool completely)
Juice of 1 lemon
Combine all ingredients in a food processor/blender. Puree until smooth. Pour into a plastic or glass container and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Check it a few times every hour or so to make sure it is not turning in to a solid block. Rake and freeze. Rake and freeze. Rake and freeze. You get the idea. Rake and serve in cute little cups.
