Just a couple of days ago I decided to sign up for Tuesday’s with Dorie – a group of amazing women who get together and post every Tuesday about what they baked from Dorie Greenspan’s cookbook Baking From My Home to Yours.
K bought me this book for Christmas and I have only once decided to bake from it. When I joined the group it gave me an excuse to actually use the book and to bake more often. Each week a member chooses a recipe of her choice. We each bake and post about said recipe. Genius idea!
Mary of The Food Librarian chose Classic Banana Bundt Cake on page 190 for today’s recipe. I was completely ecstatic with the choice because Banana Bread is one of my favorite and most popular things to bake. The recipe was super easy, you have all the ingredients right in your kitchen, it comes together quickly and the ending result was very good.
I decided to bake the Classic Banana Bundt Cake in mini bundt pans instead of the larger bundt pan because I love small snacks and they look adorable. Dorie suggested a lemon glaze – something that I usually don’t put on my cakes, but decided this time to throw caution to the wind! The end result gave the cake a bit of a tart kick which I enjoyed. I also put a bit of allspice into the mix because it is one of my favorite spices that lends a great hand to the bananas. All in all the end result was moist, flavorful and flew off the plate before I could finish glazing it!
