This is usually one of the meals that K and I go to when we are short on time or don’t feel like making a large dinner. It is perfect, tastey and quick!
Black Bean and Beef Tostadas
1 can of black beans (rinsed and drained)
1/2 cup refried beans
1/2 teaspoon cumin
1/2 teaspoon chili powder
4 tostada shells
1/2 pound ground beef (cooked)
Heat black beans and refried beans. In a medium bowl mix black beans, refried beans, cumin, and chili powder. Add in cooked beef. Spread mix over tostada shells. Sprinkle with lettuce, tomatoes, salsa, cheese. Enjoy.
