The non official start to the official vacation…

I love waking up early and having tea in bed with a good book.  Since today was my first official day of our vacation that is what I decided to do.  I needed a little relaxation time before starting off the day.  You see today I needed to get down to business and get packing.  Everything that I put off yesterday needed to get done and today is the last day left.  So after a couple of chapters and an awesome tea I went on my merry way.  I packed so many cute new outfits that I bought and can’t wait to wear them.  Especially my new Michael Kors flip flops.  I completely flipped when I saw them and needed to buy them.

After packing I decided I needed to make the friendship bread that Bookish Penguin gave me. Instead of making it all in one pan I made it into muffins. Muffins are so much easier and smaller. This way I could freeze all of the muffins (except for the two I ate today). I didn’t want to make the bread and then have it go to waste because we were leaving. So now our freezer is full of friendship muffins. At least we will have something to eat when we return!
After some baking I finished the rest of the cleaning that I had, packed up my bag for the flight and cuddled with K a little. Then off for a waxing and to go with my mother to pick up her new car. It was a pretty eventful day and now I can’t wait to crawl into bed and get some well needed sleep. Then wake up tomorrow to start my “real” vacation.

Things I should have been doing…

Things I should have been doing today but didn’t:

1. Packing. I leave in a day and half and what did I decide to do with K today after work – Wendy’s and a movie.  Sayyy what?!?!

2. Baking the friendship bread. I just couldn’t get my ass up to even think about baking it today. Work was so long and crazy that I just could bring myself to do much of anything when I came home.

3. The gym. My sister asked me to go. But did I? No. I should have. I think I would have felt a thousand times better then I do right now. Bad Wendy Bad.

4. Ironing. In order to pack I need to iron some of my clothing. On top of that I need to iron my scrubs so when I get home I don’t have to do it right before work after we get off the flight.

5. Getting Big Red ready for the trip to my parents. I can’t have Big Red at home all by himself. How would he eat?

6. Packing my carry on.  I am a freak about my carry on.  It must have everything I need.  Books.  Snacks. Water. iPod.  Hand Cream. PSP. GameBoy. Games.  

7. Cooking dinner.  I know I should have cooked dinner. We should have eaten in. We are going to be eating out for the next week.  But no. I wanted Wendy’s. Again…Bad Wendy Bad.

# 36. Only buy clothing I am truly in love with

I can’t believe I had a successful shopping trip yesterday. Lately it has been very hard to find anything that I truly love and want to wear. So many things out there are horrible or only made for someone who is a size 2.

Now what do we eat?

So there hasn’t been much on the cooking/baking end here for last couple of days and it has been killing me. I love coming home every night and figuring out what to cook. Unfortunately, since we are going on vacation we have pretty much dwindled down all of our foods. There are no fresh fruits or vegetables. No cheese. No eggs. Very little milk. Our meats are down to the bone. On top of having no fresh foods K and I haven’t been home together since Tuesday. It has been such a hectic week that we have been running around like chickens without heads. I am looking forward to just having time to do nothing when we are out in California. And of course some time to see some sites. It really doesn’t feel as though we are going anywhere because neither of us have packed. Ekk! I am usually packed a week in advance! I really think I should get on that…

Today I found this online shop that I am in love with. Kir De Vries.  They have the cutest things!! Here are the couple that I have been eyeing.  Maybe if I have some money left over when I return from California I can buy a little something new for myself!

Need sleep…

I want to go to sleep so badly today, but can’t seem to get to bed.  I have been up since the crack of dawn and just sat down to finally relax.  I don’t think that the two cups of coffee that I drank today are helping either.  I am not a coffee drinker so I believe the two cups are going to keep me up all night.  This morning I found out that a drunk driver completely totaled my mothers car and wrecked part of my fathers car.  She was driving 50 down their street and hit my mothers car from behind which then pushed my mothers car into my fathers.  They were lucky that it was 3am and that no one was around to get hurt.  The women was completely drunk and then asked my parents not to call the police.  Ridiculous.  So now my mother doesn’t have a car.  After finding this out, I had work.  Work was completely busy because all of the kids have off and we are only in the office next week for two days.  After work I had dinner with my parents and K.  It was good to get out and have a good laugh and some great dinner.  After dinner I hung out with my family a bit while K went home to head to bed (he has to wake up early tomorrow for work).  I finally walked in a bit ago and know that I need to get to bed, but know that it isn’t going to happen anytime soon.  I feel as though I will start cleaning or something with all this energy I have.  All I really want to do is go to sleep so that I can wake up tomorrow to start another busy day.  Unfortunately I don’t think that is going to happen…

K in the kitchen…

So after a long day of working I came home to K cooking. This is an unusually odd sight because I am the cooker while he is the dish washer. But I have to admit that when he does cook it usually comes out amazing. He is just like his brother – they both know how to cook completely without a recipe. I can do it, but not as well as those two can. They amaze me. A couple of years ago when they were living together I stopped by to see what they were up to. When I had called K said he was cooking with his brother. I couldn’t believe this so I had to see it for myself. When I arrived they both were in the kitchen looking into a huge pot. They happen to be making chili. Now I make a mean ass chili, but I have never tasted a chili like these two guys put together. It was hot yet sweet. It was one of the best chilis I have ever tasted. It seems that they just started adding ingredients and would taste, then add more. To this day they don’t know exactly how much of what or even what they put into it. It is a shame…it was a wonderful chili!
So he decided to make stuffed peppers. They were very good, but a little spicy for me. Next time he is going to tone down the hot factor. Otherwise it was a great dinner and I hope to come home and find him cooking more often!

Requests! Sweet!

Three orders for Martha’s Classic Crumb Cake in one week…can you believe that! Well, they are not actually orders (because I am not selling them) but requests!

1.  My mothers friend at work. She is having a together over the weekend and has requested that I make the cake for it. My mother had brought a piece to work for her. She needed to get some of the cake out of the house because my father was actually going to eat the whole cake himself (that is how much he liked it!).

2. My sister took some of the cake to school with her and shared it with one of the teachers she worked with. The teachers are having a bit of an “end of the school year” party and the teacher requested that my sister bring the cake. Sweet!

3. I took some of the cake to work with me. The ladies at work are always eyeing whatever I bring and then requesting me to bring it in. Usually I make something for them every couple of weeks. Last time it was Pioneer Women’s Peanut Butter Pie. I guess this time it is going to be Martha’s Classic Crumb Cake.

I never knew when I made this recipe that it would become so popular. Usually my go to recipe for a party is my Banana Bread – you wouldn’t believe the requests I get for this one. I actually need to get tons of bananas in the summer because every family BBQ I go to they want it. That recipe is a new family secret and I have yet to give it away! I think that at my next family BBQ I am going to bring the Martha’s Classic Crumb Cake also and see what the masses think. I think so far they like it…

*Side note: I guess I am going to have to end up buying Martha’s Baking Handbook. K is not going to be happy about another cookbook, but it is too good to pass up!
