# 8. Take daily vitamins

After having blood taken the test have come back….I am happy to say that I indeed to not have Celiac disease.  Wooooooo Hooooo!  I am so happy to find this out.  On the other hand he said that I am not getting enough vitamins – my vitamin D was especially low.  So he prescribed me vitamins.  Each day I have two pills I need to take and in 3 months I have to go back and have more testing.  I am certainly glad that it wasn’t what we had originally thought it was.  So from now on I have to take a daily vitamin…prescribed.  So one more off the list!

 

The Saturday Seven – Places I have been today…

1. Whole Foods – I love this place. There are so many things that I wanted to get, but I only ended up getting the bits of this and that I really needed.

2. Trader Joe’s – Another great place to shop!

3. The Container Store – I was looking for some containers for the kitchen. Didn’t find what I was looking for, but sure did find a lot of stuff that I wanted to buy.

4. Peir 1- Supposedly this store will be going out of business soon…I sure hope not!

5. Barnes and Noble – Needed a good book to read. Got it and can’t wait to start reading.

6. Stew Leonards- bought I bottle of wine for tonight’s girls night, but now that we aren’t doing it so I just might drink it myself tonight!

7. Chef World – When I am in the area I always have to stop in and take a look. If I was rich I would buy half of the things in this store…

Our perfect wedding cake topper or so I think…

So I have been looking for a perfect wedding cake topper for our wedding. I don’t want the traditional topper and I don’t want something that is too different. I wanted one right down the middle (seems easy right?). K and I have a sense of humor and want to lighten up our wedding reception, but all of the a funny wedding cake toppers that are out there aren’t our speed or just seem to have a sports theme to them. Neither of us are really into sports. Then friends of ours went the custom way. We thought about it, but they did it so it would be best to go our own way. So I think I have found the middle ground. Something different. Something cute. Something like us. I have found it…I think.

Build a Better Blog Challenge

I have been lagging when it comes to the 31 Days to Build a Better Blog Challenge. I have just received the 20th challenge, yet I am still at the 9th challenge. It isn’t because I don’t want to do the challenge, but that I have been so busy as of late that I really haven’t had the time to do so. There are so many things that I would like to do, but the clock is not on my side.

Challenge # 9 I have decided to skip. It is Join a Forum and Start Participating. The only forum that I have been a part of is the Weezer forum years ago. I had the time and the sort of job that let me check the postings whenever I pleased. I have no time at my recent job to be on the internet and when I am home I would rather not be on the computer…I would rather be enjoying life with K.

Challenge # 10 is Set Up ‘Alerts’ to Monitor What is Happening in Your Niche. It asks that we spend time ‘watching’, ‘monitoring’, ‘listening to’ and ‘reading’ to what others are writing on their blogs or social media accounts. This is something that I do already. When I do get a chance (when K is in bed at night or the occasional lunchtime internet time). I enjoy reading each and every blog I come upon and I am always finding new ideas/recipes for my own blog.

Challenge # 11 is to come up with 10 post ideas. I actually don’t have a problem with this yet. I am always searching, reading and finding new topics. I sometimes have so many topics on my mind that I have to write them down or send them to myself in e-mails.

Challenge #’s 12-27 to come soon…hopefully!

No Bake Milky Way Tarts

Another dessert that I made this weekend for the BBQ was a recipe I have been dying to make from Culinary Concoctions by Peabody.  Every time I go over to to her website I drool.  There are so many different and wonderful recipes that I want to try.  So when I came across the No Bake Milky Way Tarts I knew I had to make it.  It was so simple and delicious!

No Bake Milky Way Tarts
1 package (4 ounces) min i graham cracker pie crust

Midnight Milky Way Layer:
2 Midnight Milky Way bars (1.76 oz each), cut into small pieces
¼ cup semisweet chocolate chips
2 TBSP heavy whipping cream
1 TBSP unsalted butter

Milky Way Mousse
1 Milky Way bar (2.05 oz), cut into small pieces
1 cup plus 1 ½ TBSP heavy whipping cream

Garnish: Cut up Milky Way pieces

Place crust on a rimmed tray.
For the Midnight layer: Put ingredients in a small heavy saucepan over low heat. Stir with a whisk until candy bars, chips cream, and butter melt and mixture is smooth. This takes awhile, about 10-13 minutes. Pour into crush, over and refrigerate 1 hour or until firm, or up to two days. 
For Mousse: Put the regular Milky Way bar and 1 ½ TBSP cream in a small saucepan over low heat. Stir with a whisk until candy melts and mixture is smooth. Refrigerate 15 minutes to cool.
Add remaining 1 cup heavy whipping cream into the bowl of an stand mixer. Using the whisk attachment, whisk cream on high until stiff peaks form.
Add the cooled Milky Way mixture into the chipped cream. Whip for 30 seconds. Spoon into piping bag.  Pipe in a spiral on top of Midnight layer. Serve immediately or refrigerate up to 4 hours.
Right before serving garnish with extra candy pieces.

{No Bake Milky Way Tarts}

*The photo is not the best.  Nothing compaired to Peabody’s.  It was taken with a cell phone camera because I am so behind that I had to rush out and wasn’t able to take the proper picture I would have liked.  Plus I didn’t have any to bring home because everyone one of them was eaten! Oh and no garnish because the candy bar I took to garnish the finished product was eaten too!

Chocolate Covered Bananas!

Chocolate covered bananas are one of the easiest things to make. I find that they are a good snack when you are watching a movie or just need something to nibble on and also perfect for warm summer nights. They are homemade and healthier then most of the things you would usually find in your freezer!

Chocolate Covered Bananas

coconut
wooden craft sticks

Peel, then cut each banana in half crosswise and insert a craft stick into each half. Place on a tray, cover with plastic wrap and place in the freezer until frozen, about 3 hours.
Place the coconut in a shallow dish or on a plate. Melt the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the bottom of the top pan. Dip each frozen banana into the chocolate, turning it to coat, and immediately roll in the coconut. Place on a tray covered in waxed paper and freeze. Serve immediately or wrap individually in plastic wrap or waxed paper and freeze for up to 2 weeks.

* I did half a batch with just plain chocolate and the other half with coconut!
